I love seeing everyone's posts on what they are eating. It's far to easy to get stuck in a rut of having the same food week after week, MrLittleme being furloughed has been brilliant as we've had time to try lots of meals that we wouldn't usualy have time for, with us both working. Far too often we have the same thing, as its quick and no-one wants to cook after a long day.

I'm currently thinking of ways of keeping him hostage when it is time for him to go back to work, just to keep up with all the lovely meals.

@That-Crazy-Rat-Lady - I'm cooking tonight, and we are having the dreaded sweet potato! Sausage & mediteranian balsamic glazed veg, for some reason I can eat them, but only if I cook them. (I will add double the ammount of courgette to make up for having to eat them, and scrape most of them onto Mrlittlemes plate!)

@Trumpet - that sounds really good with a saag aloo topping, I've seen a similar thing that just had plain mash, but yours sounds way better, I shall pass the recipe onto my chef. :D

Sausages, & peeled & chopped sweet potato with a little olive oil into a large tray and into the oven while you prepare...

Courgette x 2, peppers x 2, red oinion x 2, 1 small packet of cherry tomatos and some crushed garlic, once cut into bite sized pieces tip onto the sausage & sweet potato, bake in oven for about 20 mins, take out and drizzle balsamic glaze (£2.00, Sainsbury's, other supermarkets available) then pop back in till sausages are nicely brown & veg is cooked through.

We are just having that tonight, but usually I use the veg trimmings and sauteee them in a pan, then add either red pesto, ras-el-hanout spices or harissa paste, then mix into cooked cous cous with lemon and sultanas.

MrLittleme's waiter service has brought me a Mojito, so I may have to rethink who is cooking tonight...

Tonight is what I call 'Mexican Salad'

- Couscous with Mexican seasoning and lemon juice
- Roasted sweet potato (sorry haters!) with cumin seeds
- Pepper
- Tomatoes
- Beetroot
- Red onion
- (Anything left over that needs eating)

Toss it all together - nom nom nom!

Do you use fresh beetroot? Or the vacuum packed pre cooked one? I love beetroot but we usually only have the pickled or cocktail beetroot with a salad.

My hated Sweet potato/med veg/ sausage dish also has any left over veg that needs using, and sometimes I add butternut squash, but I think this will taste great with beetroot too.

Spag Bol tonight. Homemade spaghetti and two types of Bolognese, one for the vegan and the other for the normal members of the household :P.

I am showing willing mind by opening a bottle of vegan red.

Strawberries and cream/vegan ice cream, to follow.

Let me know what the vegan red tastes like please and I love the idea homemade spaghetti as I've never tried to do that. I thought it grew on trees:lol: I'm partial to adding a splash of wine to the Bolognese when I make one.
It's the red I told you about the other day. It's nice, would recommend it.

As long as you have the equipment, pasta is really easy and quick to make and much nicer than that dried stuff.

If you're only adding a splash of wine to the Bolognese then you're a lightweight :D

Strawberries & cream - yummy. I've overdone it with the icecream & am fed up of it now, Victoria sandwich is waiting for me (shop bought, I have the kiss of death when it comes to cakes)... Or maybe Nacho crisps and cheese & onion dip, I'm still trying to decide....

I've only manged to find fresh beetroot in my local supermarket twice in the last year or so!

So in which case I buy the pre-cooked or even picked and jarred if I cant be bothered!

Tonight was a vegan 'interpretation' of this:

Except I used the marinate on a vegan burger (or falafal if your making) pop in the oven

I then char the vege and add to the blitzer with a tin of tomatoes - cook down until saucy!

I then load it all up and make fajitas!

Lots of fresh spinach, red onion, charred peppers and jalapenos!

(For meaty version husband marinates his chicken, cooks for a bit then pops in the sauce and cooks down)

Chicken burgers and spicy fries tonight.
(Firecracker chicken fillets, on brioche buns, with sweetcorn relish and mayonnaise, mildly spiced (frozen) fries, and Jack Daniels Bbq sauce, nom.)


@That-Crazy-Rat-Lady the place that I work at seems to sell bucket loads of fresh beetroot (also avacado, spring onion & iceberg lettuce) people are obsesses with it... never used fresh myself, yet...

I went for a wee one morning and was convinced I was going to die a terrible terrible horrible horrible painful death!

It was just because I had fresh beetroot the night before!

It was very vivid!

I got rushed to the doctors when I was at primary school for the same reason.

It wasn't until the doctor asked my mum what she had given me for school lunch that she realised I had eaten fresh beetroot and cheese sandwiches for two days running.

Yes! I hated beetroot for that very reason. I now really like it, but only over the last year or so.

How does one get an invite to Chez Me for tea once we're allowed?!
Lol Chez Moi? I'm worried I won't even get a seat once lockdown & furlough is over....

... I'm going to start him batch cooking over the weekend.... Looks like 15th is when my food heaven will end (unless I kneecap him first) ....
