Examples of poor driving you have witnessed!

There is no need to take your eyes off the road (bye & large)
Many new cars have "some" of their controls buried in or on the info screen in the centre of the dash somewhere, these are touch screens so you do need to take your eyes off the road to operate them, how is that safe ?
The vast majority of said cars have voice control so there really shouldn't be any need to prod deeper and deeper inside sub menus simply to turn the heating up a bit.

Think you are missing the point ?
If its unsafe to look at a phone how is it safe to look at an information screen ?

Well by that logic then clearly it isn't. So turn off the satnav and go buy a map. But remember to stop each time you need to know when to turn next.

Was it ever really safe to change the channel on an old fashioned radio or rewind the tape in a cassette machine whilst driving? You had to take your eyes off the road for that.

The only safe way is to have no distractions in the car at all, no music, no satnav, no screaming kids in the back and no front seat passenger to talk to.

And if you do have a talkative front seat passenger, you should be able to operate the ejector button on the gearstick purely by feel alone. :P
The image of you feeling around for your knob, is not one I want in my mind at this time of night.

I can make calls purely by shouting at my phone. Sadly Siri ignores me when I tell her to end the call.

SatNav gives you verbal instructions & all that is needed is a quick glance at the rolling map should you need.
For sure kids & music can be very distractive.
Most old radios had the preset buttons 1-6 and like the rewind button could be hit with the very briefest of glances.

So it is now deemed that to even hold a mobile is a crime & if its mounted in a carrier to prod the screen (have no issue with that) but the same does not apply (prodding the screen) on a cars info screen and yes altering "some" functions must be done via this way & some car reviewers on YouTube often moan about with good reason.
Take it you have never driven a Tesla.

You have a very valid point, I don't deny that.

I'm on my third Tesla, as it happens. Voice control works just fine, I find for 95% of stuff. Any other button prodding is more than acceptable in relation to driving any other car built in the last 60 years.

I think the point here is more that it's hard to prove what you were doing on your phone, checking a map or watching porn at 70mph. Making it illegal completely makes perfect sense, I'm sure cars have to pass certain criteria when making their controls?

The (seemingly) only car manufacturer that actually hires qualified UI designers probably wasn’t the best example.

Had to swerve out of my lane to avoid a collision whilst going around the Kwik-Fit Island this morning. Female in a red fiat DU10HKJ came straight out of the multi-storey exit and heading straight towards me. Blasted my horn, she never even slowed down, just kept going on the collision course whilst mouthing off at me through the window. Luckily there were no other cars in the near vicinity and I had got my wits about me.

Black Range Rover Sport Y15MPG. Followed this dickhead from Newport Road railway bridge all the way up to Milford. Driving in the gutter the whole time, through all the puddles. Must have soaked at least a dozen people. Dashcam footage given to our local community police womble who will ensure it is placed 'on file' should anyone make a complaint.
