I don't understand where your accusation for inflexibility comes from, and it's certainly not grounded. Hand on heart not one customer has walked through the doors of our pub and asked me for a 'normal bun'. But if they supplied their own bun I can't see why we'd say no.

Thank you for taking the time to reply although you did reply to me ages ago saying much the same thing.
I am not really going to carry my own buns around on the off chance that the place I go to doesn't have a normal bread roll. I would just order something else.
Last week we went to the Moat House for a bar meal. One of our party asked if he could have his meal served with chips instead of what was on the menu and they happily obliged. They didn't ask him to bring his own chips.
Likewise it should be fairly simple to ask for a plain bun with your burger.
If you think that most people prefer brioche then may I draw your attention to the thread "the brioche debate?"
In the vote twice as many people say they would prefer normal bread to brioche and a larger number still said they would prefer a choice.
People order your burgers and enjoy them but it's highly likely that a good percentage of those would enjoy them even more if they were on a normal bun.
Perhaps you could carry out a survey of your own?
