What's for dinner/tea?

Last night I happened to be passing Morrisons so I popped in to get something for tea.

Bought a lovely three fish roast for £6 (they prepare them at the fresh fish counter).

It consisted of salmon, cod and smoked haddock. Had it with mashed potatoes, carrots and peas and cheese sauce. It was lovely and I will definitely buy it again for a quick and easy meal.

There was loads left over so tonight I cooked up some peppers and mushrooms in a pan. Added some tinned tomatoes and herbs, the leftover fish, (and a packet of prawns that needed using up) then I added some cooked penne.
Served it with flat garlic bread (from Morrisons) which was reduced to 29p.

I feel like we've had 2 nights meals for next to nothing.

And I've still got loads of fish pasta and garlic bread left for my lunch tomorrow.

I always get satisfaction from creating meals from 'leftovers'. Mrs T used to just bin everything in a previous life including the legs and wings after a chicken dinner, they only used to eat the breast!

Totally agree about not wasting food and making meals from leftovers.

When we are having a roast chicken we buy a larger one than we need and extra vegetables.

When the chicken is cooked I drain all the juices and fat into Tupperware pots and this gets made into stock which I freeze for future use.

After the roast dinner, we keep some chicken back for chicken salad tea or sandwiches then I remove nearly every bit of flesh from the carcass.

With the left over chicken I would make a chicken pie and/or chicken pasta or perhaps chicken in a white sauce. (depending on how much is left.)

The carcass/bones get thrown in a cauldron with loads of veg to make soups for the freezer.

The soggy underneath bits and the skin get mixed up with cooked rice and veg and this makes scrummy dog food.

Absolutely not one bit gets wasted.

Tonight I made Turkey Keema. I enjoyed it the OH not ao much. So tomorrow we shall dine at The Fox (only because The Oakley and Red Lion are full at times I can make)

Home made turkey soup (from the freezer) with gorgeous bread from Lidl.
