The Best Thing You Will Ever Do With Beetroot

Peel and quarter (sixth if large) about a pound/half a kilo of beets.

Put them in an oven proof dish and add a thinly sliced garlic clove, zest and juice of a lemon, c. tbsp olive oil, good salt and pepper.

Cover with foil and bake @ 180 for 45mins to an hour - stir thoroughly once about half way through and recover.

Eat.

Simple Onion Pickle That You Wish You Had Known About Earlier

Half a large onion, one medium onion, whichever, with the growing bit in the middle removed, finely sliced.

Green chilli, finely sliced - with or without seeds, try both, find out which you prefer, yes that's right, it's with seeds.

Put in container and add good salt - no not that shit, good salt - probably a hefty tsp if not a bit more.

Pour over juice of a lemon and stir everything together.

Leave in fridge, stir at least once daily for a couple of days at least, give it four days or preferably more.

As far as i'm concerned this 'keeps' indefinitely, but it's unlikely it will last that long anyway.

You realise 90% of xmas dinner is vegetables right ;)

Last year we had:
Mushroom, leek and chestnut stuffed Seitan with apricot n pine nut glaze
Apricot and pine nut stuffing (crumbly)
Roast potatoes with sage n rosemary
Brussel sprouts sauteed in garlic butter
Gravy

Bought a nice looking Vegan nut roast in Lidl today. Think it needs making but still. Looking forward to having that for Christmas with my yorkshires and some onion gravy...nom nom!

You realise 90% of xmas dinner is vegetables right ;)

Last year we had:
Mushroom, leek and chestnut stuffed Seitan with apricot n pine nut glaze
Apricot and pine nut stuffing (crumbly)
Roast potatoes with sage n rosemary
Brussel sprouts sauteed in garlic butter
Gravy

Not enough sprouts for my liking but great effort.

Enjoyed the vegan fair at oddfellows hall today. Judging how busy it was when I was there they could do with a bigger hall next time :)

I was thinking the exact same thing, dependent on having the chance to book more stall holders or more space for customers either way a larger room would be better.
I'm sure Charlie is mulling it over.

I quickly moved on because of the lack of space, i went on to get some of those amazing pies from the bloke on market stalls.

Enjoying a drop of red.
Had one this morning and it was quite nice. I prefer the sausage meat version (slightly, from a taste point of view) but I'd definately have another of the Vegan.

The disappointing thing for me though was that it only contains 16 calories less than the meat option. If they could have got that to 50/75 calories then that would have outweighed the (slight) difference in taste, for me.

I joined before Christmas - the Facebook group is one of the friendliest - most informative groups I have ever been a part of!

You helped me last year make positive swaps and I can now confirm I am fully vegan (for the last 3 days at least!) and enjoying every minute!
