Recipes - covid friendly/from the store cupboard.

So, maybe people can post up any recipes that are easy, cheap and use up store cupboard essentials that you will have at home already... MrLittleme has taken over cooking duties while he's at home and I'm at work..

Yesterday, we had Chicken Phaal curry (pataks jar sauce, not overly exciting), but MrLittleme made homemade Bombay (Mumbai) Potatoes.

Bombay potatoes were made by making a home made curry paste with

3tbl spns veg oil
1 tbl spn garam masala powder
1tbl spn medium curry powder
1 tbl spn tandoori powder

(or whatever curry powder you have)

1 tbl spn ground garlic
1 tspn cumin
Salt to taste

Mix together.

Par boil potatoes, keep 2 ladles of potato water

Fry onion and paste, add par boiled potatoes, add potato water and small tin Tom's

Add frozen green beans an peas or whatever veg is available.

Cook until tender.

But stuffed with yesterday's left over bombay potatoes, served with salad and home made mint raita (yoghurt, mint, cucumber & onion).

Home made rice pudding and jam for pud.

I got a butternut squash in a veg box I had last week, never cooked with it before. We randomly had some cous cous too, so I made this, without the harrisa paste. https://www.bbcgoodfood.com/recipes/squash-chicken-couscous-one-pot

I've found some pork mince in the chest freezer, it's probably been there about 5 years but I'm going to make a keema from that at the weekend. If nothing else I might finally be able to defrost it!

My store cupboard recipe.
Jar of sun dried tomatoes.
Jar of char grilled peppers
4/ 5 heaped teaspoons of red pesto.

Packet of prawns from the freezer.

Put some spaghetti on to boil, or any pasta of your choice.

In another pan put defrosted prawns, chopped up sun dried tomatoes, chopped up jar of peppers, and some pesto.
Heat through and add cooked pasta.
Easy Peasy and tastes lovely.

If you have a seemingly incongruous collection of ingredients in the fridge that need using up (and you don’t want to opt for the student method of just bunging them all in a curry) try listing the items on google - adding the word ‘recipe’ - and usually something more innovative / interesting will turn up.

Sausage, coleslaw and custard carbonara sounds delicious but I don't have any pasta.

Boil noodles in 500ml water with one chicken/vegetable stock cube - add tin of sweetcorn and/or frozen peas.

Noodle soup, serves 2

Last night we had a takeaway as the only curry house that will deliver out here opened for a few days. We thought we should support them.

I also made a proper omelette for my lunch. It was the first time it hadn't looked like scrambled eggs. I was very proud.

Well MrLittleme fresh daily food didn't last long, Chicken & bacon pie (from the freezer) with mash potato and carrot & Sweede mash yesterday.

Basa fillits (from the freezer) today with minted new potatoes, frozen green beans and frozen peas.

Today, when I finished work, I managed to buy chicken breasts, the first meat we've had in 2 weeks, you've no idea how excited I am!

Shopping next week so hopefully some new homemade recipes then. :)

I went to Lidl after work, last Saturday, their fridges had loads of chicken in, then.
Not saying it will be the same this week tho x

One of my favourite 'use ups' is to whizz old bread and crusts in the food processor along with fresh garlic then if we've been using the oven spread the crumbs over a baking tray and leave overnight for the residual heat to dry them out. Next morning add whatever spices take your fancy, black pepper, chilli flakes extra garlic powder etc. I keep mine in an old ice cream tub.
Great for coating chicken breasts before chucking in the oven or thinly hammered pork steaks for shallow frying.
Coat meat with flour, dip in a beaten egg and then the crumb mixture. I keep a container on the go all the time and add to it whenever, no two batches are the same as I use different combinations of spices etc. Current batch below.
