Chicken stir fry.

Lots of low calorie meals this week, as our naughty lockdown diet has caught up with us... I bought some scales today after us both moaning that we must of put on at least a stone during lockdown, thecarer has put on half a stone, but strangely I've only put on 2 pounds - that doesn't explain why my waistband is so tight and my bras no longer fit. :ohno::roll:
We had stir fry too, but I forgot to buy the sauce.

Yesterday we had Roast Beef dinner with the works.

Today husband had beef salad and I cooked up some pasta to add to the leftover cauliflower cheese.

Totally bizarre. Husband goes crazy for cauliflower cheese with Sunday lunch, he adores pasta.
But he doesn’t like pasta with cauliflower cheese.
Never mind, more for me.

Trying Summer beef casserole tonight with cous cous. ..

It's in the slow cooker now, apart from the veg to be added later.... But I can't quite see why there are no herbs or onions in it? At the moment it just tastes of beef & Guinness.
So I messed with the recipe a bit, I cooked it in the slow cooker, put the meat, stock & Guinness in in the morning before work, along with an onion (that wasn't in the recipe).

When I got home around 3pm it really just tasted like Guinness & beef, so I added 1tsp of tomato puree, half a teaspoon of sugar, and some Worcester sauce (all not in the recipe), then at about 4pm I added the veg...

It was absolutely lovey, not as heavy as a winter stew, and I will defiantly have it again.

Chinese takeaway later in time for the match. Sweet and sour king prawns, vegan mushroom chop suey, mushroom egg foo yung, fried rice, egg fried rice and vegan prawn crackers.

Homemade vegan Eaton Mess to follow.

Just a slight chance that a bottle of red may make an appearance, or two.

Whenever the weather is grim all I want us comfort stodge!

We had comfort stodge too.

Found a tin of corned beef in the cupboard from my Brexit Stash and some pastry in the freezer so I made a corned beef pie.

Corned beef, onion, cheese, parsley, breadcrumbs, Worcestershire sauce, bit of milk. Mix it all together in a bowl.
Put half the pastry on a large plate, pile on the filling then put the other half of pastry on top.
Costs about £4, serves four and is absolutely gorgeous.

Not very healthy though.

That's camping food - ideal for a wet day in the campervan.

This recipe is from “The Dairy Book Of Home Cookery” which was given to me in 1978.
I think the milkman used to sell them.
It’s still my favourite cook book, well used, and now held together with masking tape.

I use a 340g tin of corned beef instead of the 175g in the recipe and I double all the other ingredients.
I then pile it on a 10” plate (Hedge Rose from Boots, we all had these in the 80’s).
