What's for dinner/tea?

Too late for sludge 2 as only just gone in the slow cooker (beef in ale from reduced joint number 2), so looks like frozen pizza for us. Got some reduced trotters too but they're for the dogs. Also got salmon trimmings for the dogs, starting to think I may be spoiling them a little....

I’ve got a salmon side to use, last year we started making big rice or pasta salads so that will probably be our tea tonight. I might even make a garlic bread to go with it.

Found a cracking flat bread recipe, and so easy just 250g SR flour, 250g natural yoghurt, 1tsp of baking powder and a pinch of salt.

Mix it up, roll it out bake for 5 mins on each side then pull it out and add topping, makes a fab pizza base too but our go to is garlic and rosemary and sometimes a sprinkle of cheese. Another 5 or 10 mins back in the oven and job done!

We don’t eat red meat too often, partly because of trying to be mindful of cholesterol issues but mainly because we much prefer eating fish to meat anyway.

But tonight we had massive Aberdeen Angus Sirloin steaks, far too many chips, garlic fried mushrooms and peas.

Absolutely stuffed so the homemade apple crumble will stay uneaten until tomorrow night.

Found a recipe that we used to eat all the time but haven’t had for ages.

Oven roasted Spanish chicken with chorizo, peppers and sage, drizzled with lemon.
Had a bunch of asparagus that needed using up so put that in.
Served with baby potatoes.

I’d forgotten how easy this was to cook but how delicious.

Anyway, we both ate loads, but there’s enough to left to feed an elderly neighbour (husband calls me meals on wheels).

But the apple crumble from Sunday is still untouched in the fridge.

I'm going to nick that for another night, if you don't mind.

The recipe.
.

Here you are then, it really is lovely.

Sometimes if I can’t get sage, I just put in rosemary or whatever herbs I’ve got in.
And I double the amount of garlic.

Oh, I just use chicken thighs.

Enjoy xx

We're having a takeaway curry from Stafford tonight, which isn't our usual takeaway town... We normally go for Navarna, is Okra worth trying?

I had lunch at a friend's house and she served massala cauliflower sausages, beetroot falafel, sweet potato mash, caramelised onion and feta parcels and caramelised onion houmous.

I really enjoyed the food despite the lack of meat. The sausages were particularly nice.

That sounds mega! Can she invite me round too??

Pesto pastries yesterday and Jamaican lentil spiced patties for tea tonight!
