As mentioned in the Christmas cake thread... This is dead easy to make and is really nice. No faff with icing/topping either .

1½ cups plain flour
1/3 cup cocoa powder
1 teaspoon bicarbonate
1 cup sugar
½ cup oil (veg/ sunflower etc)
½ cup soya milk
½ cup orange juice
2 teaspoons vanilla extract
2 tablespoons vinegar

Sieve dry ingredients
Add liquids except vinegar
Whisk
Add vinegar and whisk
Bung in lined cake tin (straight away after adding vinegar)

Oven 30 mins 190C / gas mark 5

Will probably take longer than that - done when skewer comes out clean.

Should still work ok if you substitute the orange juice. Strangely it doesn't really give the cake an orangey taste.

That's what the vinegar is for - i'm fairly sure my recipe just has vinegar, no juice.

Still, what works, works. :)

It reacts with the bicarbonate and makes it rise.

Vinegar & bicarb used in a similar way for making honeycomb from sugar & golden syrup - honeycomb is pretty much the same thing as cinder toffee but is a bit thicker with more bubbles in it.
