Hello!

I was given an inordinate amount of chocolate for Christmas!

For starters (and don't shoot me!) I'm not really a chocolate fan!

I'd much rather tuck into a family size bag of crisps or a few tubes of pringels...

The other half is doing his best, but he's struggling!

Does anyone have any nice cake/ biscuit/ anything recipes that I can use up my chocolate in?

Thankyou Littleme! I have given some already to my nan, mother and auntie!

Annoyingly the other half has 'sampled' everything!

So all the boxes are open already! The only thing not open is from Thornton's and has my names iced on it....

Devil’s Food Cake

Ingredients

Cake

10 oz plain flour
2 level teaspoons bicarbonate of soda
½ level teaspoon of salt
3 oz butter or soft margerine
9 oz soft brown sugar
2 large eggs
4 oz plain chocolate (melted)
8 fluid oz milk
1 teaspoon vanilla essence

Filling

3 oz butter
5 oz icing sugar
1 tablespoon milk or single cream.

Frosting

6 oz chocolate
1 lb icing sugar
2 tablespoons hot water
2 egg yolks
3 oz melted butter

Cake

Grease and line two 7 or 8 inch sandwich tins. Sift together the flour, bicarbonate of soda and salt. Cut the sugar into the butter and cream together until pale(ish) and fluffy. Then gradually add the eggs one at a time, beating well after each.. Add the melted chocolate and beat well. Then add the flour alternately with the milk and vanilla essence. Turn the mixture into the tins and bake at 180°C / 350°F for about 40 mins – slightly longer in 7 inch tins. Cool on a wire rack.

Filing

Cream the butter until soft then gradually beat in the sifted icing sugar with the milk. Sandwich the cake together with the filling.

Frosting

Melt the chocolate in a bowl over hot, not boiling, water, with the butter. Off the heat, stir in the sifted icing sugar and hot water. Gradually beat in the egg yolks one at a time. Continue to beat until of a spreading consistency, using extra melted butter if necessary. Coat the frosting onto the cake, finishing in swirls using a round bladed knife. Leave to set, preferably until the following day, before slicing.

4 oz plain chocolate
3 eggs separated
3 tblspn sherry (or 1 tblspn brandy)
A little chocolate or whipped cream to decorate


Grate the chocolate and put it in a bowl (pyrex or other heat resistant) over a pan of hot water. Beat in the egg yolks and stir for several minutes. Remove from the heat and stir in the sherry.. Whisk the egg whites until stiff and fold into the mixture. Pour immediately into individual glasses and leave to become cold. Serve decorated with grated chocolate or cream.

I'm working my way through these recipes!

I have just made Chocolate Muffins! The other half will be gobsmacked when he gets home!

Recipe calls for 250g of chocolate - or in my case an entire Thorntons chocolate Santa!

Plus I constituted walnuts for 2 packs of chocolate buttons and some white Thorntons 'Smiley Face' buttons!
