Home Made Chips Are The Best!

Why is it that every time I buy chips from a chip shop I am disappointed!

I bought some from the Stone Rd chippy last night and they were undercooked, re-heated and horrible, this isn't just a problem in Stafford but everywhere I have been.

It would seem that with the rise of the Kebab/Pizza/ Burger type chip shop they have forgotten how to make good chips.

Get a good chip pan (forget them trendy deep fat fryers), a 1lb of lard and a good quality chipping potato like Cara or Nadine and cook your own, much nicer and cheaper!

What a coincidence!

I was disappointed to see that 60% of all home made chips are those dreadful oven chips and 3% the even worse microwave chips!

It's all about the double/triple frying too...gotta have a nice crispy chip with a fluffy middle.

Had home made chips yesterday lunchtime at the Rose and Crown, a little bit limp but very tasty and totally differant from frozen ones.

I personally would not recommend the tefal actifry we have had two of them and they have both blown up have a look on YouTube and have a look at the results also the BBC Watch Dog web site, use the actifry with caution, Better still buy a deep fat fryer and triple fry your chips
1st stage Low heat for 5 mins
2nd stage mid heat for 1min and pull out of the oil
3rd stage high heat untill golden and crispy
4th stage ENJOY

After peeling and slicing I wash and dry the chips.

In the meantime I heat the chip pan and put one chip in it, when that has cooked the fat is hot enough.

Slowly lower the chips into the fat, if you put them in too fast the fat will boil over and set fire.

The really hot fat initially cooks the outside of chip but is cooled down by the cold chips, leave the heat on full until the chips are golden brown shaking occasionally.

Shake well and serve straight away to stop them going soggy.

Proper "Thrice" chips are first part boiled (then drained), then fried at about 160 degrees until flaoting, then removed and the oil heated to 190 and chips placed back in for just a couple of mins to brown them.

I've tried the 3 part method above and it's not as good as the part boiling first. We're talking just about 5 minutes boil that's all. It makes harder work, but YEAH it's worth it ;)

We always used to use frozen over chips when everyone in the world went through their "deep fried is unhealthy" phase.

Now we just use normal potatoes cut up, quick drizzle of oil and shake to coat them then whack in the oven.

Does the job nicely. Probably not as nice as deep fried but healthy and no need for loads of oil / fat in a pan or fryer.

Just finished large plate of home made egg and chips. bread and butter , red sauce. tastes even better after the three or four maybe even five pints of Hobgoblin in the Railway this afternoon. yum burp !!

I never used to do home made chips but now I'm a total sucker for them. It's all jim jim jaroo's fault for cooking the best ones ever lol :)
