It was a special night in Riverbank Restaurant yesterday. As part of the training foundation between the College and the Lewis Partnership, Executive Chef Matt Davies led the students in preparing an exclusive menu he had designed for the occasion. He was joined in the kitchens by former student Aaron Jones, who now works for the Lewis Partnership. Meanwhile the students working front of house were joined by Operations Manager Luke Stanley to serve dishes including Cured Loch Duart Salmon with Brixham Crab, pickled cucumber, avocado, quail's egg, honeycomb and caviar (that's all one dish!)

We needed a photographer to take some pictures during the evening and having admired the work of Afasoas which I'd seen on the forum, we got in touch with him.

Thanks to Stafford Forum, again, for making it so easy to find brilliant people and to Afasoas for providing some amazing pictures incredibly quickly. Here's one of his pictures from the kitchens last night:

Incidentally, I am sorry I wasn't able to give the forum a heads-up about this event. I think everyone thought someone else had told me and I didn't find out about it until the day before - which is another reason I was so pleased Afasoas could step in. There are lots more pics from the evening on our Flickr page: www.flickr.com/photos/staffordcollege

Excellent stuff from 'our man on the ground' - again.

Do the hat colours have any significance?

That, Gramaisc, is an excellent question.

One I should have thought of asking.

I will get in touch with the lecturers and pretend I've thought of it.

I'm presuming that it's based on the same sort of principles as the coloured belt system in Japanese martial arts.

I'm pretty sure I've seen the young lass on the left wearing a green hat before, so guessing it means something. The area of kitchen they are working perhaps, so chef knows what colour hat to throw pans at if something goes wrong?

Wow. What a lovely write up! :)
I'm blushing!

It was a great gig to have... that type of work is right up my street.
Everyone was lovely and professional and the facilities at the college were amazing. I was pleased that I was just allowed to get on and shoot which meant a great range of candid photo's from the event.

I think this photo shows how well the students worked together.

Mystery solved: green hats are worn by the first year students, blue by the second years.

(Edit: I think the yellow hats must be a kind of green)

The yellow hats are green. I dropped the green saturation because of colour casts thrown by the fluorescent lighting versus the warmth of the other light sources dotted around.
