Just on my break and popped home, managed stuff half a large pork pie down my bone shute, the diet headed west a week ago, i'm really not in the mood.

We had take away curry as an anniversary treat!

Last year we canoed on Lock Ness, the year before we had a cottage with a hot tub - this year a night in and bottle of prosecco.

Not quite the same but considering we're in a pandemic and buying a house (madness!) I think I'll let it pass!

Chilli pie for tea tonight!

I told my auntie about it last week and apparently she was laughing about it with my mum!!

It's an AMAZING creation! More fool them!

(Sorry about the chipped plate - happened last week - still annoyed at myself!!)

Homemade Lamb Rogan Josh, both vegan and normal tonight and as that's it work-wise for a month, some wine may be consumed. Moderately, of course.

What replaces the lamb in a vegan lamb Rogan Josh and what does the vegan version actually taste like?

I do like a lot of vegetable Indian dishes and whilst I'm not interested in becoming a vegan I do like to try new dishes.

And one for you to try from the National Trust. Beetroot, carrot & spring onion fritters!

Ingredients
200g gram flour
200g raw beetroot, peeled and grated
200g carrot, peeled and grated
1 bunch spring onions, finely chopped
2 tbsp vegetable oil
A pinch of salt and pepper

Method
Place the flour, salt and pepper into a bowl and combine. Add in the beetroot, carrot and spring onion and combine again. Add enough water to just bind the mixture together. Heat the oil in a large frying pan over a medium heat. Once the oil is hot, split the batter mix into 4 and place into the pan.
Leave to fry for 2-3 minutes until the bottom sets and starts to go crisp. Carefully flip the fritters and cook for a further 2-3 minutes on the other side. Transfer to a baking sheet and place into you preheated over at 180°C for 10 minutes to ensure the centre of the fritter is cooked through.
Remove from the oven and serve.

Spent yesterday turning the house upside down and packing - therefore a trip to the pub was well earned!

Had chips, onion rings and garlic bread for tea - not my healthiest moment!

Tonight is Mexican salad (spiced couscous, sweet potato, beetroot, red onion, pepper plus any other vege I can find in the fridge!)

Hopefully that should even it out?!
