What's for dinner/tea?

Coronation chicken flatties, tarka dahl, and a combination of roast spiced baby potatoes, cauliflower & broccoli.

Sounds lovely, have you got the recipe for that please?
I get fed up with the same old things, always looking out for new ideas.

I was saving it for later, but the weather here is a little awkward - heavy hail showers - so, it seemed a good idea to stoke up now.

Regular readers may recognise the plate and have already deduced that it originated from next door - who assumed that I would be laid low by vaccine side effects from yesterday.

i did wake up this morning, eventually, barely able to raise myself from the bed or think coherently for about an hour. But, that is no different from a normal day and, apart from a very slightly "bumped arm", nothing else seems to have happened.

Halloumi pesto bake!

Potato, carrot, parsnip and swede chopped into bite size pieces and roasted, topped with halloumi and browned - finish with blobs of pesto!

Super easy and delicious!

Sounds delicious. Did you pre cook the vegetables before putting them in the oven?

We’ve had the leftover roast chicken from yesterday with a big salad.

Our tea is terrible, after our last trip to Iceland I said I would never bother again. But minime realised that Iceland sell Greggs vegan sausage rolls... So me & her are having those, the carer is having a chicken curry pie (couldn't find Balti pies anywhere), with Iceland Pickled onion Space invaders potato shapes, and baked beans!

Living the chav life!

Pan fried sea bass, baby potatoes par boiled then sliced and put in the oven with garlic and herbs.
Then any veg that’s left over from last weeks shop ** put in a dish (courgette, tomatoes, onions, celery, spinach) a bit of seasoning and olive oil.

** The last few months I’ve been doing my elderly next door neighbours shopping. He likes a routine so I collect his list on a Wednesday afternoon and do the shop on a Thursday morning.
It’s really got me into a good routine, I have to think ahead about what I need for the week, work out the menus etc.

It’s definitely made life easier, pre lockdown I’d be running to the shops every other day “for a few bits”, now I just use what I’ve got towards the end of the week and make a meal out of whatever.

Think a lot of people have become a similar way. Spending more time at home has led us to sit down and work out weekly menus. Less wastage as well, which can only be good. Also going to the supermarket with a list means less impulse buying or wandering round and putting random things in basket.

I even popped in a garlic bread to keep the carb monster husband happy!

He polished the lot off and complimented my 'starter' and enquired what was for mains...
