Bespoke pies?!?

Now then....we all like a good pie, right? Well, as those who frequented the Railway Inn a year or so ago will be aware, there's a master baker (no, honestly) called Tiggy who makes the best pork pies in loadsa different varieties. Anyway, to cut a short story long, i had a dream the other night about a Chicken, stuffing and veg pie...not in a pork pie stylee, but a proper teatime pie. Mmmm. So, having not seen Tiggy for months, the next time i went for a pint he came in! Maybe he sensed my need for pie. I had a chat with him about making custom pies/pasties etc, and he's well up for it. Anyone got any particularly good pie-deas (a ho ho). I think i'll ask him to make some for my house warming party (see thread in Stafford Chat).

that's gotta be one of the best post titles ever.. alas, my mundane palette means i won't have any exciting suggestions for custom pie builds.. my fave is probably my mum's chicken & ham pie - loads of premium meat, veg, gravy - the awesome power of pie!! :love:

mmm.... i personally think tat a chilli pie is the way forward. However, the world of chilli pie is a difficult one to navigate, for instance, pie in the traditional sense or pie as in cottage......

Chilli pie sounds awesome. I can understand your trepidation with regards to which "crust" to adopt, though. I'm erring towards cottage; assuming, of course, I am understanding your pastry/potato dilemma correctly. :v:

don't apologise.. your obvious zeal when it comes to honouring the 'Ford (e.g. the suggested pilgrimage, the name badge suggestion, and now this attention to pie detail) makes me weep..

sorry BBC...much as i enjoy a good steak pie, you can get decent quality ones in supermarkets or a butchers. as the title would suggest, i'm talkin bout bespoke pies, something which you can't get elsewhere. if i was to ask Tiggy to make me a steak pie i think he'd laugh!

what i'm thinking of is something out of the ordinary...monkey pie might be a little too specialist, and therefore hard to get hold of. unless we can secure a contract with dudley zoo, i think we're gonna have to think of nice combos of things we can buy closer to home...

Wh'about a three tier pie. Each tier in the pie could be separated by a layer of pastry. You could have starter in the top (prawn cocktail, melon, pate on toast, summet like that), then chicken tikka, chips or a lamb roast or sumfink in the middle, then a nice trifle in the bottom section.

You can have that idea for free.
