Bespoke pies?!?

No Stafford Pies, but I once put Rabbit Kebabs on the BBQ, whom were allegedly once residents of Stafford Castle. You got to mince the rabbit meat, mix with Onions, garlic, Scotch Bonnet Chilli's and fresh grated ginger. Mould them onto a big wooden skewer and 8 mins on the barby.

Rabbit is traditional stafford food and I reckon since we have the marshes, staffordian forefathers would most likely have eaten grebes, duck and possibly krayfish and quail.

I once spent time researching staffordshire recipes in the William Salt Library and there doesn't seem to be anything that stands out as individual to stafford. Maybe we could ask Ray Mears and Gordon ramsay to visit us and create one.

I was watching Saturday Kitchen at the wockenende, and one of the guests was cooking whole fresh Salmon in a fish kettle. The presenter then told you how to cook fish, in a fish kettle, IN THE DISHWASHER! He added that you shouldn't put the tablet in. I think we should create a 'White goods cookbook'. Every recipe has to be possible in a normal kitchen appliance other than the cooker/mike/etc. I'd be very interested if anyone can create a successful dish using only a tumble drier.

The man who inspired this thread is about to open a stall on Stafford Market! Tiggy's Bakery will be on the back wall, to the left of Lowndes Fruit & Veg.

Their pork pies are excellent (traditional pork; chilli & garlic; pork & black pud etc), their sausage rolls are much better than most others available in town (high meat content, lovely pastry, well seasoned), their scotch eggs are gorgeous (also available in chilli & garlic, black pud etc) and the freshly baked rolls and loaves are fantastic. I suspect there will be lot more on offer...these are just the products which they sell in The Railway on a Friday night.

I would imagine that the stall will be open within the next week as the sign is up and the counter's in place. I think they'll do very well indeed.

I've eaten several of their items, usually from pubs when they bring them round. The ones in the Kings Arms always seemed to sell out immediately! I especially liked the pork pie with stuffing in, will def be visiting them.

Yeah it's the same in The Railway too. As soon as they walk in a queue forms...if you're not quick you're lucky if there's anything left at all.

Yeah they're my favourite ones too. Good to see new stalls opening up on the market. This should probably be in the 'Stafford Chat' thread so I might start a new one and put the whole menu up when I next see Mr Tiggy.

Good plan. As you say, nice to see new stalls. I was in the market last week and its looking pretty bleak in the food area :(
