EoO. Tonys best, Chicken curry, no veg & Egg fried rice. Along with sweet n sour chicken balls. The curry wasn't too spicy tonight, it normally blows your socks off.
Haven’t been to see Tony in years. Neway is our go to for Chinese as it is just up the road.
Neway, EoO and Tiger Bowl are the best in Stafford in my opinion.

Flattened chicken breasts with a rub of olive oil, black pepper, onion powder, salt, paprika and oregano. Jersey Royals and coleslaw.

Oonh yeah that sounds good - what spices / seasoning do you use?
Soooo, my bog standard version is olive oil, garlic, lemon, oregano and balsamic glaze on the sausages & med veg.... Then the cous cous gets garlic, lemon, tomato paste, sultanas, and hot paprika.

Other versions, depending on what's in & available are, ras el hanout, harrissa, zaatar or piri piri, sonetimes I use the all purpose seasoning (dunns river)..... Whatevers in the cupboard!

I put olive oil into the tray (sometimes with whatever spice I want) , with sausages & sweet potato, put that in the oven, then in a big bowl i put the veg (courgettes, tomatoes, peppers, onions, mushrooms.... Anything available) add chopped garlic, lemon juice, more olive oil & balsamic glaze, mix it up then put it on top of the already slightly baked sausage/chicken & sweet potato. Keep turning it regularly.

For the cous cous, I sautee the vegetable trimmings (onion, peppers, courgettes, tomatoes) add lemon juice and whatever spice I want, add tomato puree & sultanas..... Cook on a really low heat, 5 mins before the tray bake is ready I add the dried cous cous, water (1 & 1/4 ratio) leave for 4 mins, add butter, leave for 2 min then mix thoroughly.

Voilà!


Its the easiest thing in the world really, just use up what you have in the cupboard.... Today I had forgotten to but sweet potato so just cut normal red potato's that needed using up into wedges.....

Tonights burnt offering will be steak pie, that is if he doesn't go the pub this afternoon. Home made pastry will envelope Mr Sainsburys reduced price steak, purchased over several weeks, put in the freezer and was forgotten about. Tempted do just boiled spuds with it. Then using the leftover bits in the pan, I'll make a thick beef gravy.
There will be enough for tonight and tomorrow.
I've had my fill of takeaways, it's about time I started cooking again.
But can't say I fancy it after doing a night shift and only managing 4 hours sleep.

The husband let me have a new kitten!

I therefore said he could have anything he wanted for tea!

He chose chips, beans and chicken nuggets with grated cheese on top.

He declared it the best meal he'd ever eaten!!

I don't know why I bother cooking!

But who cares - kitten!!
