Scrummy tea, we should of had it yesterday... No idea what's on the menu tomorrow as I'm not in charge anymore... A few days off too, maybe it's what I need....

We’re all bored and desperate to get out of the house!

It’s become Dinner from around the world in however many exotic meals I can be bothered to cook, started as a fake away with fish and chips, Indian (curry of some description, kind of throw everything into a pan but it was tasty) next to China with (fake) chicken chow mien and egg fried rice and veggie curry, then to Italy for homemade pizza from scratch.Last night was supposed to be Greece but the small people needed and early night so we had a postponement.

Tonight is spanakopita with Greek salad, chips and tzatziki, I randomly found some tinned stuffed vine leaves in the co-op so seems like a good time to break them out as a starter.

Suggestions appreciated for where to go to next! Two out of 4 are veggies and I can’t be bothered to cook separate meals so basically everyone is veggie by necessity.

There are a lot of nice Turkish vegetarian dishes but they may not allow you to cross the border from Greece :)

A Moroccan tagine is easy to make as a main course and if you Google Vegetarian Moroccan sharing platter you should get some ideas for starters and side dishes.

Tonights tea is the remains of yesterdays delicious steak pie. Even tho the youngest can cook, he does love his mum at home to do it for him.
He says he could get used to proper meals again, like he had as a child.
Unfortunately, unless I win this weeks national/Euro millions lottery, then he will have to fend for himself when I go back to work next week.
Only on the evenings I'm on a late tho.

I'm SUPER lazy and use Mexican 3 bean soup (cooked down) for the filling! You can basically put in whatever you like! Add some sweet potatoes tossed with paprika, cumin seeds & chilli powder! Ooh with a side of mashed avocardo! Nom nom nom!

No. It's hateful stuff.

In the old days, when we were allowed to go out for meals, I'd give waiting staff a death stare if they offered me the chance to 'upgrade' to sweet potato fries.

I often replace with butternut squash - you can buy pre-cut frozen bags of the stuff!

I don't often buy pre-prepared vege but it takes ages to peel and chop the awkwardly shaped thing!
