Cooked Baked Potato

Hi, Just after some recipe advice really, had a bit of a party yesterday and cooked far too much food. I now have about 15 cooked baked potatos left over and have no idea what to do with them, it seem such a waste to chuck them but, they wont keep for long enough to get through them all ourselves, and to be honest I dont think I could face eating another one.

if you scoop out the insides and mix them with some other ingredients - i like sour cream, chives, crispy bits of bacon or bacon and cheddar cheese, or leeks, bacon and cheese - or any combination or anything else you like! you can then freeze them and cook them whenever - just grate cheese over the top and bake them in the oven until cooked through and the cheese is crispy - yummy.

Or use the insides to make rostis (sp?) - mix it with egg and coked vegetables (preferably in some kind of shredded form), then season and make into shapes and then shallow fry - or bake if you want to avoid the oil but they're nicer fried!

How do I edit this?
Gnocci is a favourite of mine. Effectively you just need to mix the cooked & mashed insides of the baked spuds with flour and then boil (and then serve with loads of blues cheese sauce). Will try and dig out a recipe for you.
