I've not had my dinner yet. . .this all sounds soooooooooooo good. By Saturday lunchtime you'll have at least 3 new customers - every week till I've sampled the lot.

As a long time vegitarian I have always bemoaned the lack of decent veg pies. A veggie mash topped pie always works (particularly good using aduki beans, green peppers and just the right amount of chilli). But it needs a proper name! Supermarkets call their tasteless versions vegi cottage pie but cottage pie is speciffically beef, shepards pie is the same with lamb and fishermans pie with fish so what should the veg version be? Gardeners Pie? Hippy Pie? Any ideas?

From memory my aduki pie goes someything like this:

Brown some onions in a pan with a bit of oil and butter. Add a little garlic, a chopped dried red chilli (purchased from Farmers' Market and dried on my kitchen window), some chopped green pepper and a bit of any other veg I have handy (chopped carrot, corgette, cellery, that sort of stuff - maybe mushrooms). Fry this for about 5 minutes then I think they call it deglaze but chock in some wine to get all that nice brown onion flavour off the pan and into the mixture. Add a bit of marmite then add a can of drained aduki beans. These are great because they are so small, like tiny kidney beans. It means you get a texture more akin to mince rather than a colection of veg or beans in a sauce. Stick in some herbs - bay leaf, rosemary, thyme or taragon, (cos I've got these easily to hand in the garden) or herb de provance maybe (try and stay away from the italian stuff), season with S&P. Simmer for a while to get the flavours going.

I then stick this in a dish and cover with a well fluffy mash potato with lots of black pepper and grain mustard but I don't see why it couldn't be done with pastry. If you keep the mixture quite thick you could even dolop a spoonful onto a square of puff pastry for individual pies/tarts - maybe pop a bit of goats cheese on top or something. Pop in the oven until it looks cooked. Eat with the rest of the bottle of wine so you don't waste it!

Got to say that that recipe sounds reet tasty.

As an alternative to "Veggie pies"
how about "Herbi Pies" as in Herbivores

Wow, most of those sound right yummy :P
Here, most of the pie selections consist of your hell boring 'Four n' Twenty' brand meat pie (great for a cold arvo at the footy) or variations thereof i.e. steak and onion, steak and mushroom, steak and kidney etc.
Buggrit, Im going to give Doctor's recipe a crack this weekend, methinks :)

I seem to remember being rather hammered and having a go at the good doctors recipe whilst indulging in party" frollocks" .trouble is.. what with being sooo hammered I can't remember what it tasted like ..I'm hoping it was a bit nicer than the legendary "food of the world" tho.. must say tho peeps chap is a great chef/cook.does like his coriander a little bit too much tho.. but whatever it is you will enjoy I'm sure
