Chilli Bean pie.


Hoping that @That-Crazy-Rat-Lady approves...

Sweet potato, carrots, onion, courgette, tomatoes, 1 tin tomatoes, 2 tins mixed beans in chilli sauce, chilli powder, jalapenos, tomato puree...(cooked in slow cooker since this morning, chilli beans added toward the end, I've made enough for 2 meals so half going in the freezer.......then ..

Top with mashed potatoes, cheesy crushed nachos & grated cheese....bake in oven.


We were having this tonight as neither of us were at work tomorrow....just in case of excess windyness....but now I have to work...run a mile if you see me! 🤣🤣🤣🤣

I'm actually really lazy and never use mash!

Mine is more of a layered lasagne I suppose:

Tortilla
Rice
Bean chilli
Red onions
Cheese
Nachos
Then topped with another tortilla!

We call it chilli pie but it's just something weird I invented!

Last night I went to a friend's for birthday drinks so tea was pasta salad, various crisps and cheese board!

Found a cottage pie in the freezer that I’d made a few weeks ago for a day like today when I didn’t have time to cook.
Just perfect for a cold winters day, enjoyed with carrots and pea.

Enough to feed us, our 96 year old neighbour and enough left for tomorrow too.

Enjoying a drop of red.
Weird because it supposedly wasn't that cold but this afternoon's match at Anfield felt like the coldest I've ever been. So tonight was mushroom soup followed by cottage pie and copious amounts of single malt and I still feel bloody cold.

Last nights tea was the other half of the Tuna Pasta Bake. Tonight it will be Windmill chippy. GUWJLTFTBB has asked if he can have Tikka meat and cheesey chips. Have what he wants if he's going eat it.

This is not so much about the ingredients or recipe, but more about the cooking method, as with 'balti', etc.

Actually, the second half of last night's effort, but warmed up in Schott Glass covered bowl.
