Now coming to the Pie & Ale House, Stafford
Alejandro Mendez from El Salvador has just become the 2011 World Barista champion at the finals in Bogota with a fantastic coffee, La Ilusion, from Salvador roasted by Steve Leighton of Stafford.
Alejandro gave a great performance offering his specialist coffee in four parts, an infusion made from the outer flesh (cherry or casca), tea made from the flowers, tea from the mucilage and espresso coffee made from the beans themselves. Each component adds a new dimension to the coffee experience as he clearly demonstrated. The coffee all came from one single estate 1800 metres high on the Santana volcano in Salvador in the Golden belt. The entire but limited production from this estate was bought by Steve Leighton of Hasbean coffee and is available from them on line at hasbean.co.uk
Steve is the coffee fanatic who discovered this estate, La Ilusion and gently coached the best out by delicate roasting techniques and a slightly fanatical dedication to perfection. There are only 150 kilos left of this coffee in the world and The Pie & Ale house has secured a small batch to offer their customers which will be available from the 8th June while stocks last. Alongside this and also exclusive to Stafford and the Pie & Ale House there is the opportunity to taste the Casca (coffee tea) from the same estate as offered to the judges at the world championship.
The coffee bean is inside a fruit covering that is usually discarded. Most estates keep and dry some of this for a tea for themselves but never sell or export it. Steve Leighton was so impressed by it that he imported some and it is currently for sale on his website and can be tasted at the Pie & Ale House.
