Question: If I bring down a minidisc recorder and a blank minidisc, can it be wired into the sound desk and do a recording for uploading-to-the-internet type things?

I don't think that will be a problem with the mini-disc. There are RCA / line / phono outputs on the amp, so you will just need a stereo phono to mini-jack cable.
It is Steel-Spirit's turn this week. I may pop down briefly, but I am a bit busy at work : (
