What's for dinner/tea?

Meatballs. In an attempt to have another meat free option, Asda plant based ones for me, normal beef ones for him.

I’ve made loads of Cottage pies. A large one which was enough for us tonight and tomorrow.

I made 2 smaller ones, one for my elderly next door neighbour and another one for a friend who is ill at the moment.
Would have made another for an old dear down the road that I keep an eye on but although I had loads of the meat mix left unfortunately I have run out of mashed potatoes so she can have hers another day.

I've just suggested to the OH we have cottage pie later in the week. It's his job to make that and he always says it's only a winter food. Well tough, we can pretend it's winter.

Mines different every time I make it.
Today I had loads of bits of vegetables left so it went in the food processor and then got added to the mix.
So as well as the onion and garlic and tomatoes I added courgette, red pepper, carrots and mushrooms.
I only ever use 5% fat mince from Aldi.
I think today it might have been a bit veg overload and not so much meat but that's not a bad thing and it tasted ok.

I think everyone has their own recipe. Mum only ever made it was mince, onions, oxo and mash, whereas he adds carrots, peas and cheese on top. As a kid we had it as part of the meal so there was generally veg and roast potatoes on the side, nowadays it is the meal.

Sausage lentil stew with lots of chilli!

I'm proper domesticated and also made a chocolate orange cake! Only after taking it out the oven I found the orange I should have put in it...

Either way it's yummy!!

every week since lockdown pretty much make this with the bacon substituted for quorn veggie bacon and spaghetti for the linguine, apparently I can cook. I'm not bored with it yet: https://www.bbcgoodfood.com/recipes/courgette-tomato-linguine
That looks lovely, I grow courgettes every year & we usually have what I call 'Pasta Americano' in the summer, = courgettes, bacon, garlic, peppers, onions, 2 x tinned toms, chilli powder & whatever pasta is around. Its a filling, cheap & delicious meal.

Homemade meatloaf (from the freezer as the carer made 2 last time), roast potatoes, carrot n sweede mash, cauliflower cheese (out of the freezer & pimped with extra cheese) and some kind of tomato chilli sauce.... Nom Nom Nom.

We’ve had “store cupboard ingredients” prawn curry.

Jar of Aldi butter chicken curry sauce, but I use gigantic tiger prawns instead of chicken. Add onion and a jar of peppers and some sun dried tomatoes. Just gorgeous.
