What's for dinner/tea?

Today I added another ready meal to the list of ready meals I do not like.....this is so far all the ready meals I've tried.

Tonight's effort at 4.45pm (due to work commitments) was a HORRIBLE prawn, chicken & chorizo paella...half of that in the bin.... Next effort was cold pizza slice at 10.45pm....yup my fox can have that too....

Any ideas on quick easy meals for one? Not ready meals?
Scrambles eggs with salmon, or greens on toast covered in a thin spread of tomato puree. My easy go to

Salmon isn't my thing, but thank you fur the suggestion..

I've gone from cooking for 5, to at times just cooking for me... It's really hard (as a cooker for 5) trying to think of good nutritious meals for one that fill you up & aren't pre-prepared.

Tonight the carer cooked, lamb kebab skewers, falafels, greek salad, Waldorf salad & baby leaf salad with tabbouleh...way to much for 2, but delicious.

My husband occasionally works away so I'm in the position of having to cook for one.

I usually do roast vege - easy to chuck in and requires minimal effort!

You could do the recipe you gave me with sausages and balsamic vinegar!

I hate cooking just for one, I either end up not doing enough, so I starve, or I do enough to feed the five thousand.
If youngest is either out with his Dad or at the pub with his friends. Then 9 times out of 10 I end up having toast, or a jam butty. Not at all nutritious, healthy or filling. Occassionally I will have a jacket potato with cheese and beans.

M & S Moussaka & chunky chips. Followed by Tarte au Citron .( their £12 meal deal ).
Best we've ever tasted , even in Greece. Deffo getting that again!

Chicken burgers potato waffles & baked beans, reliving the 70's!

Edit, don't bother being conned by thinking the co-op meal deal is worth it, it was awfull.

Husband's dream meal!

Went to a friends for tea - cheesy pasta and a giant slice of chocolate cake!

Plus I got to pet her cute cats!

Will be returning asap!
