What's for dinner/tea?

Well the carer made tea, and what sounded like a good idea ended up as a bit of a disaster....

We'd got some pork loin steaks that he hammered out, filled with cheese & stuffing, wrapped in bacon, and cooked in the oven in hunters sauce.... Not as nice as they sounded.

Veg (potato, carrot, onion & courgette) rosti..... Lovely

Roast potatoes..... Lovely

Braised cabbage & apple (I batched cooked a while ago & froze, but tasted way too sweet).

Veggie chilli!

When I delivered it to the husband he enquired 'Am I on a diet or something?'
It was topped with cheese and tortilla chips!

What more does the man want from me!?!

I had a Hello Fresh voucher and ordered a box of 4 meals for 4 people for c£20 which I didn’t think was bad.

Tonight we had chickpea curry with basmati rice and wilted spinach, I wasn’t expecting much for a curry flung together in 20ish minutes but it was actually really tasty.

Pizza & chips every single night.... As the carer would too if left to his own devices.

At lunch he complained that I don't cook a wide variety of vegetables/ pulses....

Today he has had:

Pepper, tomato, red onion, spinach, rocket, jalapenos, chickpeas, spring onion, kidney beans, white onion, sweetcorn, broad beans, chilli and another variety of tomato!

The only meal he organises is breakfast - he had toast.

(I know I complain about him but I LOVE cooking and him very much!)

A lazy Katsu chicken curry with Katsu ping rice.

*all out of packets/jars/the freezer... Because I can't even be bothered to cook properly.
