I had cheese on toast with a tin of All day breakfast poured over the top. Great unwashed,Jesus looking thing from the back bedroom had a big bowl of pasta, smothered in cheese and the 2 large sausage things out of my tin of ADB.

This evening, my eldest did us a roast beef dinner, spuds, carrots and cabbage (just for me), yorkie puds, stuffing - and why not? Pigs in blankets and gravy. Followed by a slice of chocolate cake.

Because I'm worth it.

Tonight will be moules frites shortly, having procured some fresh ones when out and about earlier. Onion tart with a caramelised onion sauce for starter.

The last of the stash of Staffordshire Oatcakes out of the freezer (walked to sons earlier to take him 4 for their birthday breakfast in the morning before I ate them as well ).
Filled with baked beans, bacon, mushrooms and melted cheese on top. Delicious !

Notes on Sweet & sour cabbage with bacon.

Lots of my family members all make this recipe using different things, some use pork, belly pork, bacon or sausage, I use gammon most times and have it as a main, not side.

My recipe.... (serves 4 greedy humans)

1/3 of a 1.6kg gammon joint (1.6kg gammon joint was half price at £6.00, cut into 3, 2 went into the freezer leaving one for today)

2 large onions, sliced

1 medium white cabbage, sliced

1 cup water

1/2 cup cider vinegar

1/2 cup sugar (granulated is fine)

Salt


Throw the lot into the slowcooker, 1 hr before serving remove gammon & slice, return to slowcooker.

Mix cornflower & water to thicken sauce.

I serve with mash & buttered corn cobs.

Brekkie/dinner was brioche finger roll with ketchup , mushrooms and the last 3 pigs in blankets in.
Tonight's tea was in a Hickorys Smoke House for sons bday. I had slow cooked bbq pulled pork in a baked beans sauce ( or something like that) , coleslaw and chips . Hubby had my jalapeños which came with it .
