Homemade Lamb Rogan Josh, both vegan and normal tonight and as that's it work-wise for a month, some wine may be consumed. Moderately, of course.

That looks absolutely lovely, however the only vegetable I’m not keen on is aubergine.
Would it work with something else, or even just miss it out?
Just found a Jamie Oliver recipe that uses butternut squash and cauliflower. Cauliflower goes well with most Indian dishes.
Also another recipe I found uses potato, sweet potato or pumpkin.
lot of fresh beetroot this week. I thought I was dying the other day.
