Rather like 'our own' steak tartare.
I had the pleasure of trying a real one of these recently, one of the teachers at the college is French and he prepared it how he considers is proper. Finely chopped fillet steak, capers, a little onion (shallot?), it was divine! If you are served raw minced beef you are in the McDonalds of the French food industry, or worse.
As for diet, I'm amazed I'm still alive. An alcoholic with a penchant for posh cider and a palate that appreciates very little under 200,00 scovilles. I make a mean chilli lasagne though!
